How would I add a dutch gable to an existing roof?
You should be able just do select the edge of the roof that you want to be a Dutch Gable (make sure that only this edge has a green arrow - all the others are red), then go to Properties, click the Roof Shape icon and select Dutch Hip.

I just can't this to work properly. It works ok on a basic roof section, but any roof that has even a slightly non standard shape and a dutch hip just makes the roof go crazy.
What do you mean by a "slightly non standard shape"?
It would help if you could post an image of the plan and an indication of where you are trying to insert the Dutch Gable and what you want it to look like.

Hopefully you can see from the attachments what I mean. That front section of roof is only one "section" but I want to add 2 dutch gables as per the front elevation attachement.
I have tried to replicate your house shape but your plan does not show the front wall, so I have had to guess at it based on the elevation, so it may not be quite right. I assume I have it roughly right as the elevation looks similar. The 'portico' section is not there of course - that probably would be best on its own Location, as the walls are higher and the roof is independant of the other roof.
Doing it as on the Plan below, I did not have any problem with it at all and can only assume that maybe you did not have the correct section of the roof highlighted. Only the edge of the roof surface that has the gable must be selected when you change the roof Type to Dutch Gable.
On the Properties for that surface, you may need to increase the Horizontal Distance of the Roof Section - Surface 1 (Straight) not the Gable section. As you increase the Horizontal Distance the size of the gable section will decrease.

I think my issue is to do with the portico section of roof- I just extended the roof out to cover this area and when it did this the layout of the roof changed quite a bit. I sounds like the portico roof should be separate on it's own location? I'll delete the roof and try again with this in mind and let you know. PS. How did you get the front facing gable area to be filled in, when I do it it just makes any empty space.
Generally, if the walls are a different height, so the support for the roof is adifferent height, then it is easier to use a separate Location with all the vertical distances set accordingly for that Location. If your portico is separate, or at least the roof is on the Portico Location, it will not affect the main roof. In Australia such roofs are generally separate anyway.
To get to gable to fill in, just tick the Display Gable box on the Gable Properties for that section of the roof.
